What’s the difference between a slip on and a full exhaust?

Aside from price, what is the real difference between a full and a slip on exhaust? Does one sound better than the other? and is it worth the price difference?
Also can you tell me if i should dish out the extra hundred dollars for a carbon fiber exhaust rather than an aluminum or stainless steel one?
